The Champagne Cuvée Parcellaires by Assailly is a refined expression of the Grand Cru terroir of Avize, an iconic village of the Côte des Blancs where the chalky soil shapes some of the most elegant and mineral Blancs de Blancs in all of Champagne. Born from carefully selected parcels farmed with sustainable practices that preserve their integrity and authenticity, this wine gives voice to the purity of the land, faithfully rendering the luminous, vertical character of its village.
This edition, 2018 harvest, expresses the purity of Chardonnay grapes in a refined Blanc de Blancs vinified in stainless steel, a choice that highlights the aromatic clarity of the variety and the transparency of an entirely Grand Cru terroir. After the tirage comes a long ageing on the lees for a minimum of seven years, able to give the wine depth, complexity and creaminess without ever compromising the freshness, the tension and the finesse of the fruit that define its identity.
On tasting, Cuvée Parcellaires reveals a bright golden robe and a fine, creamy perlage, while on the nose it releases a generous, sunny bouquet of ripe yellow fruit, candied citrus and white flowers, enriched by hints of brioche, dried fruit and honey given by the long rest on the lees. On the palate it impresses for its breadth and roundness, with a full, enveloping structure balanced by a vibrant freshness and a marked chalky minerality that accompanies a long, saline finish of great harmony.
