Hommage
The Champagne Hommage by Assailly holds an intimate, family story, born as a tribute from Maurice Assailly, founder of the Domaine, who chose to dedicate this cuvée to his son as a sign of continuity and faithfulness to his roots. An authentic expression of Avize, one of the noblest Grand Cru villages of the Côte des Blancs, it captures all the nobility of a chalky terroir able to give Chardonnay a luminous minerality and a tension that travels through time without ever betraying the memory of its place of origin.
This edition, born from the selection of Chardonnay grapes sourced mainly from Grand Cru vines in Avize, presents itself as an elegant Blanc de Blancs of marked territorial identity and remarkable stylistic consistency. The approach to vinification reflects a deep respect for the artisanal heritage of the Domaine, where every step aims to preserve the varietal identity and the finesse of the terroir, with no concession to passing trends and in the name of an uncompromising authenticity.
On tasting, Hommage it stands out for its remarkable finesse and verticality, with a refined, crystalline aromatic profile in which chalky notes intertwine with ripe citrus and a delicate hint of pastry of great elegance. On the palate it appears vibrant and chiselled, reflecting with clarity the minerality typical of Avize and sustaining a taut, slender structure that carries a long, saline and deep persistence, the fruit of work faithful to memory and to the place of origin.
