Blanc "Cochelet" 2022
The Coteaux Champenois Cochelet Blanc by Aurore & Florian Laval tells the story of Boursault, on the Rive Gauche of the Vallée de la Marne, through a north-facing vineyard growing on brown calcareous soils set over silt, which give back freshness, finesse and a marked territorial imprint. The name recalls the cochelet, the old country feast of the last day of harvest when the new wine was offered to the family rooster before the celebrations began, a memory that here becomes a cuvée éphémère reserved for sunny years alone.
This edition, from the 2022 harvest, involves a picking of Pinot Noir grapes vinified entirely as a white wine, with a gentle pressing that preserves the clarity of the must and protects its aromatic delicacy. Vinification and maturation then continue for twenty-two months in barrique, always in contact with the fine lees, in a slow and patient path that builds volume and complexity without ever covering the mineral character of the soil.
On tasting, Cochelet Blanc 2022 shows an intense straw yellow dress crossed by golden reflections, opening onto a subtle and deep nose in which citrus and white flowers weave into fresh hazelnut and a delicate mineral trace. On the palate the texture is taut and harmonious, supported by a precise acidity that stretches the flavour development, while the saline, faintly smoky finish confirms its balance and long persistence.
