Macellum
The Champagne Macellum by Assailly is a sophisticated and unique Blanc de Blancs that celebrates the excellence of the Grand Cru vineyards of Avize, one of the most prestigious terroirs of the CĂ´te des Blancs. Made exclusively from Chardonnay grapes, this is a distinctive characteristic of Assailly, who places great emphasis on enhancing the terroir and the purity of the vine. Vinification in stainless steel to preserve the freshness and purity of the Chardonnay, followed by a long ageing on the lees, which adds complexity and structure without obscuring the wine's natural elegance. The remuage is done manually, a detail that underlines the craftsmanship of Domaine Assailly.
The cuvée Macellum has a brilliant golden colour, accompanied by a fine and persistent perlage that expresses elegance and refinement. On the nose, it reveals a complex and intense bouquet, where notes of citrus fruits, white flowers and dried fruit stand out, with a nuance of honey and slight hints of brioche bread. The minerality is marked, evoking the chalky character of the Avize soil. On the palate it offers a full and round structure, with notes of ripe fruit, citrus fruits and a pleasant freshness that balances the intensity of the flavour. The minerality and salinity, characteristic of the Côte des Blancs terroir, lend depth and persistence, leaving a long and refined finish.
