Champagne Assailly
Millésime 2014
The Champagne Millésime by Assailly is a real case study for those seeking the purest expression of the terroir of the Côte des Blancs, a wine that bears the unmistakable signature of Avize, a village classified entirely Grand Cru. Here the subsoil is dominated by Belemnite, an extremely pure chalk that acts as a thermal and water sponge, regulating the vegetative cycle of the vines, and it is from this soil that Chardonnay draws the iodised minerality and the cutting tension that define the great Blancs de Blancs of the area.
This edition, Vintage 2014, stands out for a parcel-based approach, with Chardonnay grapes sourced exclusively from the "Les Monts Cheneveaux" lieu-dit and from old vines of over sixty years which, thanks to their deep roots and naturally low yields, give great concentration and density. Vinification takes place in wood following a Burgundy-inspired approach and, after the tirage, comes an ageing on the lees of over nine years, with a final dosage in a Brut style that preserves its balance and enhances its capacity to evolve over time.
On tasting, Assailly Millésime 2014 shows a bright straw-yellow hue crossed by golden reflections and a fine, persistent perlage, while on the nose it reveals an evident maturity made of notes of pastry, fresh butter and toasted hazelnut, supported by the typical chalky imprint of the Avize Grand Crus. On the palate it is straight, clean and extremely elegant, with a leading freshness that intertwines with a balanced, deep structure, delivering a round, harmonious finish of long persistence.
