The Champagne Cuvée Les Origines by Assailly is a Blanc de Blancs made exclusively from Chardonnay, sourced from the Lieu-Dit “Les Acacias”, a single parcel located in the heart of the Grand Cru village of Avize, in the renowned Côte des Blancs. The old vines, rooted in chalky soils, give the grapes a profound mineral identity and an extraordinary expression of terroir.
The vinification takes place entirely in fût de chêne, a choice that brings structure and complexity to the wine while preserving the finesse of the fruit. This artisanal approach enhances every nuance of the Chardonnay, allowing for an elegant and measured evolution without compromising authenticity.
On the palate, Les Origines reveals a delicate and mineral profile, with a fine, dynamic texture that evolves gracefully in the glass. The production is ephemeral and limited in quantity, a reflection of a philosophy devoted to quality and respect for the original Lieu-Dit.
