The Champagne Rosé by Assailly is a fascinating surprise in a land devoted to Blanc de Blancs, bringing an unexpected touch of colour and sensuality into the undisputed realm of Chardonnay. Combining the mineral, chalky tension typical of the Grand Cru of Avize with a delicate fruity texture, this wine proves to be an original and personal expression, able to tell with elegance the soul and identity of the Domaine and the luminous vocation of its village.

This edition, conceived as a refined rosé d'assemblage, blends the Chardonnay grapes of Avize with a small share of Pinot Noir, about 10%, which signs its elegant coppery robe and its distinctive fruity profile. After the tirage comes a long ageing on the lees for a minimum of 30 months, which enriches its complexity, creaminess and finesse, in a style able to preserve the freshness, the tension and the mineral precision that have always distinguished the Grand Cru of Avize.

On tasting, it stands out for its delicate pink hue with bright, coppery reflections and is crossed by a fine, continuous perlage, while on the nose it reveals notes of small red fruits such as wild strawberry and raspberry, enriched by citrus and floral nuances and a sharp chalky imprint. On the palate it impresses for freshness and elegance, with a delicate, vibrant texture supported by a marked salinity that accompanies a long, mineral, persistent finish of great expressive finesse.

Assailly

Founded in 1899, Champagne Assailly boasts over a century of family history, carried on today by brothers Pascal and Vincent with the same dedication as their forebears. The Domaine is based in Avize, a village classified Grand Cru in the renowned Côte des Blancs, the chosen land of Chardonnay. Here, among historic vines and family cellars, the Domaine's identity has been shaped generation after generation, blending modern techniques with traditional expertise in a style faithful to values of authenticity and a constant pursuit of quality.

The vineyard extends over roughly ten hectares planted almost exclusively with Chardonnay, on chalky, limestone soils that give the wines freshness, finesse and a striking mineral elegance. From this vocation come Blanc de Blancs Champagnes with a refined, luminous profile, an authentic expression of the Avize terroir and of respect for a land tended with care. A true Grand Cru that elegantly reflects the purity and the light of the Côte des Blancs.
