The Champagne Nature by Assailly tells the most authentic side of Avize, a Grand Cru village that stands as one of the noblest chalky terroirs of the CĂ´te des Blancs, able to give Chardonnay an unmistakable mineral tension. Guardian of a family tradition begun in 1899, the Domaine Assailly carries its vision forward with rigour and sincerity, allowing the purity of the soil and the brightness of the vineyard to translate into a wine of great verticality and expressive coherence.
This edition, built on the assemblage of three different harvests, comes from Chardonnay grapes mainly sourced from the Grand Cru of Avize and presents itself as a true Blanc de Blancs, the result of a vinification and maturation carried out in wood following a Burgundy-inspired approach. After the tirage comes a minimum of 30 months of ageing on the lees, which shapes its depth and finesse, while the choice to offer it with no final dosage, in a Brut Nature style, delivers a taut, vertical profile free of any compromise.
On the palate, it reveals a crystalline and finely saline profile, with a vibrant, taut entry that unfolds on delicate citrus, mineral and slightly iodised notes, supported by a fine, creamy and elegant mousse. It wins over for balance, freshness and tension, with a slender, luminous structure that carries a long, deep persistence, closing on a straight, chalky and saline finish of rare clarity that confirms its extraordinary coherence.
