Champagne Assailly
Millésime Magnum 2013
The Champagne Millésime by Assailly is a real case study for those seeking the purest expression of the terroir of the Côte des Blancs, a wine that bears the unmistakable signature of Avize, a village classified entirely Grand Cru. Here the subsoil is dominated by Belemnite, an extremely pure chalk that acts as a thermal and water sponge, regulating the vegetative cycle of the vines, and it is from this soil that Chardonnay draws the iodised minerality and the cutting tension that define the great Blancs de Blancs of the area.
This edition, Vintage 2013, stands out for a parcel-based approach, with Chardonnay grapes sourced exclusively from the "Les Monts Cheneveaux" lieu-dit and from old vines of over sixty years which, thanks to their deep roots and low yields, give great concentration and density. Vinification takes place in wood following a Burgundy-inspired approach and, after the tirage, comes an ageing on the lees of over nine years, with a final dosage in a Brut style that preserves its balance and enhances its capacity to evolve over time.
On tasting, Assailly Millésime 2013 shows a bright straw-yellow hue with greenish reflections and a fine, persistent perlage, while on the nose it alternates fresh citrus, white flowers and a sharp chalky imprint with delicate hints of brioche and almond given by the long years on the lees. On the palate it wins over for energy and precision, with a vibrant freshness and a marked salinity that sustain a taut, vertical structure, leading to a long, chiselled finish of great mineral clarity.
