Rosé de Saignée "Qvevri"

The Champagne Rosé de Saignée "Qvevri" by William Saintot is a rich and vinous expression of Pinot Noir, a variety celebrated on its own that comes from around the Premier Cru villages of Bisseuil and Mutigny, in the Grande Vallée de la Marne. The cuvée gathers the soul of a clay-limestone terroir with a marked personality, where the use of terracotta "Qvevri" vessels reflects a craftsmanship-driven philosophy, faithful to the authentic character of the place it comes from.

This edition, 2018 harvest, is made exclusively from Pinot Noir grapes, with skin maceration in terracotta "Qvevri" amphorae for around six months followed by two months in fût de chêne, in a process that shapes its colour and depth. The malolactic fermentation not performed preserves the original freshness of the fruit, while the final dosage of 3 g/l, in an Extra Brut style, enhances its precision, letting the vinous and terroir-driven matrix of this terroir emerge.

On tasting, the Rosé de Saignée "Qvevri" stands out for a rich and enveloping profile, where the broad structure and the vinous vein converse with a freshness that supports its development. On the palate the texture reveals density and energy together, accompanied by a fine perlage and a long, deep persistence, in a taut and chiselled finish that seals its balance and character.

Five generations of Vignerons come together in the story of Domaine William Saintot, based in Avenay-Val-d'Or, in the Grande Vallée de la Marne. The family's bond with Champagne began in 1918 with Firmin Saintot, followed by his son Clément, who founded his own label, and then William, who purchased the first plots of land and became a nurseryman. Since 1995 the estate has passed to the descendants, up to the current management entrusted to Nathalie and her son Morgan, who carry on with dedication the passion and the work built by the previous generations.

The Domaine extends over roughly ten hectares, spread mainly across the Premier Cru villages of Avenay-Val-d'Or, Mutigny and Bisseuil, with a few plots in the Aube, at Champignol-lez-Mondeville, which add a further variety of soils and exposures. The vineyard is planted predominantly with Pinot Noir, alongside Chardonnay and a small share of Meunier, as well as a tiny portion of Arbane and Petit Meslier, two of the four cépages oubliés that bring vivacity and freshness to the wines.

Each village expresses its own terroir: Avenay-Val-d'Or, hilly and well exposed, yields vinous Pinot Noir on silty-clay soils with fragmented chalk at depth, Bisseuil offers freshness and fine minerality, while Mutigny lends lightness through its silts. The philosophy is one of artisanal, respectful work, with HVE certification, living soils rich in biodiversity and Chardonnay plots certified Organic from the 2025 vintage. A Domaine where every plot tells its own story, in constant dialogue with nature.
