Champagne William Saintot
Blanc de Noirs Magnum
The Champagne Blanc de Noirs by William Saintot is an intense and territorial expression of Pinot Noir, a variety presented here on its own in an Oeil de Perdrix style with delicate coppery reflections, with grapes coming mainly from the Premier Cru villages of Bisseuil, Avenay-Val-d'Or and Mutigny, in the Grande Vallée de la Marne. The cuvée stems from a stylistic vision that favours depth and complexity, in a reading faithful to the authentic character of the terroir and able to translate its most sincere voice.
This edition, the result of a Réserve Perpétuelle running from 2015 to 2023 that widens its depth and articulation, brings together Pinot Noir grapes alone, with vinification and fermentation carried out 40% in fût de chêne, 47% in stainless steel and the remaining 13% in ovoid vats, without fining or filtration and with no malolactic fermentation. After tirage, the wine ages on the lees for at least 24 months, while the final dosage of 1 g/l, in Extra Brut style, enhances its gustatory precision and the balance between breadth and verticality.
On tasting, the profile proves assertive and elegant, with notes of ripe red fruit interwoven with subtle spices and a chalky vein recalled from its terroir of origin, in a whole that combines immediacy and depth. On the palate the texture shows breadth and tension together, sustained by a dynamic freshness and a fine perlage that accompanies a long, deep and enveloping persistence, in a saline and finely chiselled finish that seals its balance and character.
