Les Blanches Voies 2012
The Champagne Les Blanches Voies 2012 by Vilmart is a Blanc de Blancs Millésimé that luminously and sensually embodies the purity of Chardonnay. The grapes come from the historic Lieu-Dit “Blanches Voies”, located in the Premier Cru of Rilly-la-Montagne, where vines over 60 years old sink their roots into a terroir cultivated with full environmental respect, certified according to VDC and HVE standards. The 2012 harvest is followed by meticulous vinification, involving 10 months of ageing in 228-liter oak pièces, without malolactic fermentation, in order to preserve freshness and tension. The wine then rests 84 months on the lees in bottle, developing complexity and finesse. The low dosage of 4 g/l defines its Extra Brut style, enhancing the balance between mineral energy, aromatic precision, and gustatory depth.
Visually, it stands out for its bright lemon-yellow hue with silvery highlights, enlivened by an exceedingly fine and delicate effervescence, which announces elegance and breadth. On the nose, it is intense and profound, opening with floral notes of jasmine, orange blossom, and peppermint, then giving way to more gourmand tones of bourbon vanilla, pastry cream, and apple crumble. On the palate, it is enveloping and flavorful, layered with citrus and sweet notes of marmalade and tarte au citron, leading to a fresh and harmonious finish, where pear and white peach notes emerge. A Champagne of extraordinary refinement, combining aromatic depth and mineral tension with impeccable precision.
