Rosé Cuvée Rubis

The Champagne Cuvée Rubis by Vilmart is a Rosé that comes to life in the Premier Cru village of Rilly-la-Montagne, where the Domaine interprets the terroir of the Montagne de Reims with an artisanal philosophy devoted to respect for the vineyard. What emerges is an elegant and sensory vision of Champagne, in which the generosity of Pinot Noir and the finesse of the soils intertwine in a vibrant expression, capable of uniting refinement and immediate pleasure.

This edition, which forgoes a single vintage in favour of a harmonious blend, brings together 90% Pinot Noir grapes, partly vinified as red wine, and 10% Chardonnay from Premier Cru parcels alone, with a vinification and maturation in oak foudres for around ten months carried out without malolactic fermentation, so as to preserve freshness and tension. After the tirage comes an ageing of at least 24 months on the lees, completed by a final dosage of 8 g/l, in a Brut style.

On tasting, Cuvée Rubis reveals itself with a pink hue shot through with ruby reflections and a fine, dynamic perlage, while the nose, expressive and seductive, unfolds notes of white cherry, raspberry and fig, enriched by a delicate floral hint of elderflower that refines its profile. On the palate the attack is lively and bright, supported by a well-calibrated acidity that lends structure, balance and drive, leading to a long and flavourful finish in which the red fruits return alongside citrus nuances of rare harmony and pleasant persistence.
