Grand Cellier d’Or 2021
The Champagne Grand Cellier d'Or by Vilmart takes shape from the Premier Cru of Rilly-la-Montagne, along the northern slope of the Montagne de Reims, where vines of over fifty years of age interpret a clay-limestone terroir capable of uniting aromatic finesse and deep mineral tension. It is the most accomplished expression of the vision of Laurent Champs, chef de cave, an artisanal philosophy devoted to elegance and precision that gives life to a wine of great breadth and remarkable ageing potential.
This edition, Vintage 2021, features a blend with a majority share of Chardonnay grapes alongside 20% Pinot Noir, with vinification and maturation for ten months in 228-litre oak barrels, without malolactic fermentation so as to preserve freshness, aromatic tension and expressive precision. After tirage it undergoes ageing on the lees for at least 36 months, while the final dosage of 6 g/l, in a Brut style, completes its profile with measure, balance and absolute coherence.
On tasting, Grand Cellier d'Or 2021 shows a luminous golden-yellow hue crossed by a fine and persistent perlage, while the nose alternates elegant notes of brioche, green apple and citrus with warmer exotic nuances of candied pineapple and delicate hints of barely accented melted butter. On the palate it reveals an ample and creamy structure, admirably sustained by a vibrant, saline minerality that carries its persistence forward with evident drive toward a long, refined and elegantly taut finish.
