The Champagne Chevry by Domaine Piollot is a single-parcel expression born from the eponymous lieu-dit in Polisot, in the Barséquanais area of the Côte des Bar, where clay-limestone soils of Kimmeridgian matrix and a favourable exposure shape an ideal microclimate for Chardonnay. This is a Blanc de Blancs that embodies the philosophy of a vigneron devoted to organic viticulture, able to render with crystalline precision the identity of a single terroir through a parcel-driven, single-variety approach.

This edition, Vintage 2017, is crafted from Chardonnay grapes alone, sourced from vines over twenty years of age. Vinification and fermentation take place in oak vats and barrels, with careful temperature management aimed at preserving freshness and aromatic tension. After tirage, the wine rests for at least five years on its lees, prior to dégorgement. The final dosage of 5 g/l, in a Brut style, accompanies its character with measured restraint.

On tasting, Chevry 2017 reveals itself on the palate with silky elegance and a creamy bead that underscores its expressive finesse. The gustatory texture is sculpted by a nervy acidity and a chalky minerality of remarkable length, sustained by a vibrant concentration that enhances structure and balance. The finish is refined and persistent, with a golden glow of luminous freshness closing on saline notes and floral suggestions of rare composure.
