The Champagne Cuvée de Réserve by Piollot comes from the Barséquanais as an authentic portrait of the village of Polisot, a choral expression that intertwines the voices of the different vineyards of the Domaine. The philosophy embraces certified organic and biodynamic farming, choices that amplify authenticity and expressive balance, restoring the most sincere truth of the clay-limestone terroir of the Côte des Bar. A cuvée conceived as the signature calling card of the vigneron's style, interpreted with an oenological vision capable of carving out an unmistakable identity of immediate readability.

This edition is born from a blend that shows a prevalence of Pinot Noir grapes with 30% Chardonnay, grown on marl soils from the Kimmeridgian subsoil. Vinification and fermentation take place in tanks and oak barrels with indigenous yeasts, lending an articulated texture and breadth to a blend that enhances the depth of Pinot Noir and the finesse of Chardonnay. After tirage, the wine rests on the lees for at least four years, and the final dosage of 6 g/l, in Brut style, harmoniously accompanies the expression of the fruit.

On tasting, the wine reveals a pale gold hue crossed by a fine and continuous perlage, which introduces a palate defined by floral notes of hawthorn, nuances of mirabelle plum and hints of brioche and toasted almond. The structure is ample and balanced, sustained by a vibrant acidity that dialogues with the roundness brought by the oak ageing, delivering depth without weighing down. The finish is long, saline and of rare clarity, with a persistence that reflects the authentic character of the Polisot cru.
