Sous le Mont Blanc

The Champagne Sous le Mont Blanc by Elise Bougy originates from the Grand Cru village of Le Mesnil-sur-Oger, in the Côte des Blancs, from a small 0.18-hectare parcel gifted to the winemaker by her grandmother. This Blanc de Blancs precisely expresses a terroir of pure, iodine-rich chalk, with an east/south-east exposure, offering a personal and distinctive interpretation of Chardonnay from this area.

This edition, with a 2021 base harvest, is crafted through spontaneous vinification and fermentation in 600-liter demi-muids and 228-liter barrels, using indigenous yeasts and undergoing malolactic fermentation. After tirage, it ages on the lees for a minimum of 36 months, gaining depth and precision. The final dosage of around 1 g/l, in Extra Brut style, supports a pure and essential profile, while production remains extremely limited.

On the palate, Sous le Mont Blanc shows great brightness and finesse, with notes of white flowers, herbal hints, and a pronounced chalky character. It reveals a precise and concentrated texture, driven by energy and delicacy, with a persistent saline tension that faithfully reflects the identity of the terroir.
