Chetillons de Haut 2021

The Champagne "Chétillons de Haut" by Adrien-Dhondt is born from a single parcel in the lieu-dit Les Chétillons, in the upper part of the Grand Cru of Le Mesnil-sur-Oger, where deep chalky soils and an east-facing exposure shape a terroir of great precision and verticality. The vines, cultivated biodynamically with deliberately low yields, express here a sharp and recognisable mineral character, perfectly aligned with the vision of Adrien Dhondt, one of the most compelling names of the new Champenois generation.

This Troisième édition, harvest 2021, is born from spontaneous winemaking and fermentation in barrique, followed by 10 months of ageing on the fine lees without fining or filtration, with malolactic fermentation carried out to harmonise the natural acidity of Mesnil Chardonnay. After the tirage, the wine ages on the lees for at least 36 months. The final dosage of 7 g/l, in Brut style, supports the structure of the wine without altering its freshness.

In the glass, it opens with an elegant and luminous profile, with white flowers, candied citrus and a chalky trace that speaks directly to the terroir of origin. On the palate the texture is taut and precise, crossed by a saline minerality that runs through the entire tasting with coherence and rhythm through to a long and crystalline finish. Production in a limited run of 3,267 bottles, 30 magnums and 10 Jéroboams.
