The Champagne Les Moulins by Domaine Doussot-Bourdot is a Blanc de Blancs made from Chardonnay grapes sourced from a single parcel (lieu-dit) with south-west exposure, located in Lieu-Dit Les Moulins in Loches-sur-Ource, in the Côte des Bar. The vines, with an average age of 20 years, grow on Kimmeridgian clay-limestone soils, rich in fossiliferous marls, a defining element that gives the wine a strong mineral and territorial identity.

This edition, 2022 harvest, is developed through vinification and fermentation entirely in oak barrels, followed by a maturation of around 10 months without filtration or cold stabilization, in line with an artisanal and non-interventionist approach, while after tirage it undergoes lees ageing that enhances complexity and depth. The absence of final dosage, in Brut Nature style, preserves a pure and direct profile.

On the palate, Les Moulins reveals a refined and luminous profile, with notes of ripe citrus, white flowers and dried fruit, accompanied by light oaky nuances and hints of wet stone. It is energetic and vertical, supported by a well-defined saline tension that leads into a precise and persistent finish, perfectly reflecting the understated elegance of the vigneron’s style. The total production is 2,434 bottles.
