Val Moré 2018

The Champagne Val Moré by Domaine La Borderie comes to life in the Côte des Bar, on the sun-drenched slopes that stretch around Bar-sur-Seine, an ideal land for a ripe, luminous and truly generous Pinot Noir. From a single vineyard planted in 1998, this Blanc de Noirs is born of a patient, artisanal vision, an intimate dialogue between chalky soil and grape variety that conveys character, depth and a sincere, passionate expression of its very own terroir.

This edition, Vintage 2018, undergoes a vinification and maturation with roughly 5% in wood and the remaining part in steel tanks, where malolactic fermentation takes place. After the tirage comes an ageing on the lees for over 48 months, while the final dosage of 3 g/l, in an Extra Brut style, preserves its drive and definition.

On tasting, Val Moré 2018 shows a pale golden colour of fine brightness, while the nose releases a broad array of blackcurrant and redcurrant, followed by elegant notes of toasted bread, almond, honey and a refined touch of sweet spices of great finesse. On the palate the entry is extremely clean, with a vinous and enveloping profile, supported by a marked saline and mineral texture that brings tension, balance and a long, deep and truly vibrant persistence. Production in a limited run of 1,600 bottles.

Domaine La Borderie

Domaine La Borderie is a young estate, founded in 2013 by the will of Simon and Marie Normand, a brother and sister who chose to take up the legacy of their family's property. Eleven hectares stretch out around Bar sur Seine, in the Côte des Bar, where the Seine meets the Arce. Their ambition is clear: to craft single-parcel cuvées through meticulous research, playing on the ripeness of the grapes while remaining faithful to the most traditional varieties of this terroir — Pinot Blanc, Chardonnay and Pinot Noir — always with a keen attention to preserving biodiversity and the surrounding landscapes.

In the vineyard, the focus falls on restrained yields and a high degree of ripeness, which translates into an intense concentration of aromas. In the cellar, the grapes are pressed as soon as they are harvested to preserve their integrity, and each batch of juice is vinified separately according to its origin: in this way the palette of aromas broadens and takes shape in blends of ever greater character. The result is an authentic Champagne, a faithful expression of a land and of the two siblings who chose it — an invitation to discover the Côte des Bar in all its elegance.
