Champagne Billecart-Salmon
Le Sous Bois
The Champagne Le Sous Bois by Billecart-Salmon is an original and distinctive cuvée that pays tribute to the roots of the champenois style through a vinification entirely in wood, in keeping with artisanal tradition. The blend brings together in perfect harmony the three classic varieties: Chardonnay (43%) from Grands Crus of the Côte des Blancs, Pinot Noir (28%) from Premier and Grand Crus of the Montagne de Reims, Aÿ and Mareuil-sur-Aÿ, and Meunier (29%) from the Vallée de la Marne. The grapes come from over 40 crus harvested within a 20 km radius around Épernay, using farming practices aimed at preserving biodiversity. The blend includes 9 different vintages (from 2006 to 2017), with a significant proportion of reserve wines (34%), which provide maturity and depth.
The production involves low-temperature fermentation, with ageing in barrels and foudres over 15 years old, while malolactic fermentation is partial. The tirage is followed by extended ageing and a final Extra Brut dosage of 5 g/l.
Upon tasting, Le Sous Bois reveals a brilliant golden yellow hue, crossed by a fine and continuous perlage. On the nose, it offers a harmonious bouquet of pastry, citrus and orchard fruits, enriched with malty notes, mocha, and bergamot. On the palate, it shows great balance and finesse, with an elegant evolution on tones of milk bread, melted butter and sweet spices, revealing a structured and chiselled soul.
