Grand Blanc Magnum
The Champagne Grand Blanc by Assailly celebrates the Chardonnay vocation of Avize, one of the most renowned Grand Cru villages of the CĂ´te des Blancs, where chalk rises through the subsoil and lends the variety a crystalline, deep minerality. As the expression of family know-how handed down since 1899, the Domaine Assailly nurtures an intimate bond with its own vines, turning the light and purity of this terroir into a vertical wine that elegantly tells the character of its village.
This edition, born from the assemblage of three different harvests, showcases Chardonnay grapes sourced mainly from the chalky soils of Avize and presents itself as a refined Blanc de Blancs of marked territorial identity. After the tirage comes an ageing of about 36 months on the lees, which enriches its complexity, depth and creaminess, while the final dosage, in a Brut style, preserves its freshness and balance, enhancing the natural finesse of the variety.
On tasting, Grand Blanc stands out for a fine, persistent perlage and a crystalline profile in which the chalky minerality intertwines with delicate notes of white flowers, fresh citrus and golden hints of toasted bread of great finesse. It impresses for the balance between freshness and roundness, with a straight, slender structure that carries a long, saline and enveloping persistence, closing on a clean, elegant finish of rare clarity that confirms its Grand Cru vocation.
