Champagne William Saintot
Trilogie
The Champagne Trilogie by William Saintot is a blended cuvée that brings together the three historic grape varieties of the Grande Vallée de la Marne, a faithful expression of the Premier Cru terroirs of Bisseuil and Avenay Val d'Or. Grown on clay-limestone subsoils with an average parcel age of thirty years, it gathers the soul of a landscape where viticultural practices respectful of the natural balance lend the wine freshness and finesse, in a sincere reading of the authentic character of the place it comes from.
This edition, the result of a blend of five vintages from 2016 to 2020, brings together 40% Pinot Noir, 31% Chardonnay and 29% Meunier grapes, in a balance that weaves freshness, structure and complexity. Vinification and fermentation take place 63% in fût de chêne and 27% in stainless steel tanks, with partial malolactic fermentation and without cold stabilisation or filtration. After tirage comes an ageing on the lees of at least 30 months, while the final dosage of 1 g/l, in an Extra Brut style, defines a taut and essential profile.
On tasting, Trilogie stands out for a profile marked by freshness and finesse, where tension guides the development with a clean cadence supported by a well-calibrated structure. On the palate the texture reveals smoothness and elegance, accompanied by a fine perlage and a long, harmonious persistence, in a clean and deep finish that seals its balance and character.
