The Champagne Dorien N°80 by Stéphane Regnault is a Blanc de Blancs, from 100% Chardonnay grapes harvested in the lieu-dit Hautes-Mottes, a small plot of vineyard planted in 1950 and 1980, on a chalky soil, located near the village of Le Mesnil, classified as 100% Grand Cru in the Côte des Blancs. This Champagne, 2018 base vintage, has initially aged for its 50% in steel vats and for 50% in second-hand wooden barrels, and then has rested for 3 years in the bottle on its own yeasts. Its final dosage is of only 1 g/l - making it an Extra Brut. Rich and structured Champagne with an excellent saline depth. Limited edition product of only 2,670 bottles.
