Champagne Maurice Choppin
L'Age & La Raison 2017
Maurice Choppin's Champagne L’Age & La Raison 2017 is the result of the blending of 80% Chardonnay and 20% Meunier coming from old vines planted in the limestone terroirs of the village of Damery, in the Vallée de la Marne.This Cuvée vinifies in fûts de chêne, the fermentation is spontaneous with indigenous yeasts, as well as the malolactic fermentation; aging on the yeasts for at least 60 months. No filtration and clarification process. The dosage remains within the Extra-Brut parameters (3 g/l). Champagne L’Age & La Raison is certified with a high environmental value (HVE) which certifies a rational agriculture done by the Domaine Maurice Choppin.
