The Champagne Blanc de Noirs by Georges Remy conveys the sunlit soul of Bouzy, a Grand Cru village in the Montagne de Reims that has found its most recognisable identity in Pinot Noir. The vines grow on the chalky soils of Les Vaudayants, Hennepés and Huriauts (lieux-dits), plots set around the village, where the favourable exposure and the depth of the chalk give grapes of full ripeness and rare finesse. It is from this geography, read plot by plot, that a style takes shape capable of bringing together power and restraint, the expression of a careful viticulture that respects its own terroir.

This edition, Vintage 2021, sees vinification and maturation carried out over ten months in fût de chêne, a choice that widens the texture of the wine without ever covering its original tension. After the tirage comes a long rest on the lees of at least 36 months, the time needed for the bubbles to integrate and for the aromatic profile to gain depth and nuance. At dégorgement the wine is left with no final dosage, in a Brut Nature style, for an absolutely clear definition of the fruit.

On tasting, the Blanc de Noirs 2021 shows an intense and finely calibrated profile, opening with generous notes of ripe fruit that gradually give way to shades of yellow fruit, walnut, butter and caramel. On the palate the balance between freshness and minerality supports a broad, vibrant structure, with a weave that stays firm from the attack through the mid-palate. The persistence is long and refined, closing on a finale of great elegance that confirms the depth and character of Bouzy. The overall production amounts to 2,844 bottles and 49 magnums.
