Rosé Saignée de Meunier
The Champagne Saignée de Meunier from Domaine de Bichery comes from Meunier grapes grown in the Côte des Bar according to an approach based on environmental respect and the enhancement of the terroir. This edition, based on the 2022 harvest, expresses a mature and linear balance, defining a cuvée of great clarity, strong territorial identity, and natural tension.
The selection of grapes comes from the lower part of the parcel La Fontaine du Noyer, a terroir that gives the Meunier aromatic density and a precise mineral imprint. Vinification involves spontaneous fermentation with indigenous yeasts, a combined use of used barriques and steel, natural malolactic fermentation, and a long ageing on fine lees. Bottling takes place without filtration, without fining, and without dosage, in a Brut Nature style, to preserve maximum expressive transparency.
In tasting, Saignée de Meunier reveals itself as structured and complex, with aromas of ripe cherry, dark berries, touches of liquorice, and elegant floral nuances. On the palate it is pulpy, concentrated, lively in its progression, and supported by a texture that combines energy, depth, and layered persistence, true to the nature of the place and to the expressive power of Meunier. Produced in a limited edition of 680 bottles.
