Le Blanc de Blancs A/19 2019

The Champagne Le Blanc de Blancs by Ayala embodies the Maison's Cuvée Signature, a manifesto of the central role of Chardonnay and of its pursuit of a pure and balanced style. Conceived as a constantly evolving line, with successive editions dedicated to complementary terroirs, this cuvée tells a different story of Champagne Chardonnay each time, enhancing the purity of the chalk and the elegance of its emblematic grape through Grands and Premiers Crus.

This edition A/19, Vintage 2019, brings together six crus selected during the harvest, four Grands Crus from the Côte des Blancs such as Chouilly, Cramant, Le Mesnil-sur-Oger and Oger, alongside the Premiers Crus of Cuis and Vaudemange, the latter from the Montagne de Reims. Vinification involves the micro-vinification of the individual parcels in small stainless steel tanks and, after tirage, follows five years of ageing on the lees, while the final dosage of 5 g/l, in an Extra Brut style, preserves the fullest expressive purity.

On tasting, Le Blanc de Blancs A/19 appears bright and dynamic, with a fine, persistent perlage that introduces an elegant bouquet of pear, grapefruit and jasmine, enriched by delicate honeyed nuances that broaden its aromatic depth. On the palate it proves direct and slender, threaded with notes of blood orange and pastry, sustained by a marked vivacity and pleasant bitter returns that lead into a long, saline finish marked by that chalky minerality which signs the Maison's style.

Ayala

The Maison Ayala was founded in 1860 by Edmond de Ayala, originally from Colombia, who chose Aÿ as the home of his Champagne project. The Ayala name was officially registered on November 5, 1875, with the Commercial Court of Reims. Family-run since its inception, Ayala remains one of the rare independent Houses in Champagne, preserving a strong identity deeply rooted in its history and terroir.

Throughout the 20th century, the leadership of the House passed through key figures: after the death of René Chayoux in 1969, Jean-Michel Ducellier took over and led Ayala until 1995, remembered for prioritizing collective interest over personal gain. In 2000, a financial group led by Jean-Jacques Frey acquired the House, initiating a new phase of development under Thierry Budin. A decisive turning point came in 2005, when the Société Jacques Bollinger acquired Ayala with the ambition of restoring its historic prestige.

Today, Ayala, based in Aÿ, stands out as a small yet highly precise producer. The House is managed by Hervé Augustin, while stylistic continuity is ensured by Chef de Cave Nicolas Klym, who has held the role for over twenty-five years. With more than 80 hectares of vineyards, Ayala is among the rare Champagne Houses able to rely largely on estate-grown grapes, ensuring consistency, typicity, and a limited production that clearly expresses the Ayala style.
