The Champagne Brut Majeur “Assemblage de 70 crus” by Ayala represents one of the most iconic expressions of the Maison’s style, built around precision, purity, and elegance. The cuvée originates from more than 70 crus spread across the Côte des Blancs, Montagne de Reims, Vallée de la Marne, Sézannais, Vitryat, and Côte des Bar, territories that contribute to shaping a harmonious and luminous profile. The predominance of Chardonnay brings tension and finesse, a distinctive signature of the Ayala style.

This edition, based on the 2021 harvest, is composed of 55% Chardonnay grapes alongside Pinot Noir and Meunier, enriched by 43% vin de réserve from the 2016 to 2020 harvests, and interpreted through a meticulous micro-vinification process in which each cru, grape variety, and vintage is vinified separately in the Maison’s small stainless steel tanks, preserving aromatic integrity, precision, and the identity of every parcel. After tirage, the wine matures on its lees for at least 3 years, while the final dosage of 6 g/l, in Brut style, guides the wine toward a balanced, fresh, and particularly refined expression.

In tasting, Brut Majeur reveals a fine and persistent perlage alongside a precise aromatic profile marked by fresh citrus, white flowers, and white-fleshed fruit. On the palate, it shows a smooth and balanced structure supported by vibrant freshness and a delicate vinous-fruity character that gives continuity to the tasting experience. The finish is long, clean, and refined, perfectly consistent with the elegant identity of the Maison.
