Champagne Apollonis
Saison 2014
The Champagne Saison by Apollonis is created by the original and musical vigneron Michel Loriot, who weaves his passion for classical composition together with his work in the vineyards of Festigny, a prestigious village in the Vallée de la Marne. Here the clay-limestone terroir and a philosophy built on the harmony between music and nature give life to a wine that authentically reflects the identity of Meunier, the leading grape of this hilly land crossed by sonic vibrations.
This edition, Vintage 2014, comes from a blend of 55% Meunier grapes, 30% Chardonnay grapes and 15% Pinot Noir grapes, harvested in the finest plots of the village. Vinification and maturation are carried out with artisanal precision, respecting the raw material and its varietal expression. After the tirage comes a long ageing on the lees, which enriches the wine with depth and aromatic complexity. The final dosage of 5 g/l, in an Extra Brut style, enhances its balance, combining freshness, elegance and structure.
On the palate, Saison 2014 stands out for an intense and harmonious profile, in which the gustatory texture develops with a creamy and vibrant progression. Fullness and tension emerge in perfect balance, supported by a solid structure that never sacrifices finesse and energy. The persistence is long and clear, marked by a mineral rhythm that accompanies the wine through to a precise finish, a faithful reflection of the excellence of the vintage.
