The Champagne Les Pierrières Collection by Ulysse Collin is a Blanc de Blancs originating from a single lieu-dit in the Coteaux du Petit Morin, characterized by chalky soils rich in black flint, which impart intense minerality and a distinctive aromatic profile. The Chardonnay vines are farmed according to sustainable practices, with low yields and separate vinifications to preserve the purity and identity of the terroir.

This rare “Vieillissement en cave – 48 mois” edition, based on the 2017 harvest, differs from the “classic” Les Pierrières through an additional 12 months of cellar ageing. Alcoholic fermentation, carried out with indigenous yeasts, lasts between three and six months; the wine undergoes neither fining nor filtration, and natural cold settling occurs over the winter. Once bottled, it rests for 48 months on the lees, with no further filtration prior to disgorgement.

The Collection encompasses the cuvées of Ulysse Collin drawn from different harvests and disgorgements, each expressing unique nuances of the same vineyard. The dosage, around 2 g/l – Extra Brut – enhances the tension, precision, and mineral persistence that define Les Pierrières.

On the palate, Les Pierrières Collection opens with an elegant bouquet of yellow apple, ripe citrus, and delicate smoky notes, enriched by nuances of white pepper and fresh chalk. The palate reveals an ultra-fine, creamy mousse, a taut and vibrant structure, with flavours of white-fleshed fruit, green melon, and hazelnut, all supported by a saline, chalky finish of remarkable depth and persistence.
