The Champagne Dorien by Stéphane Regnault is a Blanc de Blancs whose name recalls the Dorian mode in music, the thread that links the vigneron’s cuvées, and which intensely expresses a single parcel in Le Mesnil-sur-Oger, a Grand Cru village at the heart of the Côte des Blancs. The grapes come from the Les Hautes-Mottes lieu-dit, a small parcel on the southern side of the village with vines planted between 1950 and 1980, rooted in deeply chalky terroir where organic and biodynamic farming practices bring out the purity of the soil and the depth of the Chardonnay.

This edition N°99, based on the 2019 harvest, is made exclusively from Chardonnay grapes and enriched with 35% vin de réserve from the 2014 to 2018 vintages. Vinification and spontaneous fermentation are followed by about 10 months of maturation in barrique, which gives the wine breadth and complexity without taking away its tension. After tirage, the wine ages on its lees for more than five years, and the final dosage of 1 g/l, in the Extra Brut style, preserves all the richness and structure of this Champagne.

On tasting, Dorien N°99 shows a rich and layered profile, in which lemon peel and pith intertwine with hazelnut, brioche, delicate hints of anise and a clear chalky imprint. On the palate it is broad and structured, driven by long, precise acidity and remarkable saline depth that leads to an elegant, mineral finish of great persistence. Production in a limited run of 1,210 bottles.
