The Champagne Solera by Fabrice Pouillon is an authentic and timeless expression of the Mareuil-sur-Aÿ terroir, a prestigious village classified as Premier Cru in the Vallée de la Marne. Made from an equal blend of Pinot Noir and Chardonnay from selected vineyards, it follows the Solera method, a process that removes the influence of individual vintages to enhance the true essence of the terroir. This cuvée is born from the union of 24 consecutive vintages, with a base composed of 30% from the 2020 harvest, while the remaining part comes from a blend of vintages ranging from 1997 to 2019. This approach, known as "anti-millésimé", achieves a perfect balance of freshness, complexity, and elegance.

During tasting, the Solera by Fabrice Pouillon stands out for its fine and velvety perlage, delicately enveloping the palate and providing a sensation of roundness and structure. On the nose, elegant saline notes intertwine with sweet spices and essential oils, while the freshness of aromatic herbs adds depth and dynamism to the bouquet. On the palate, it mirrors the olfactory sensations, evolving with tension and balance. Citrusy and mineral nuances emerge with vibrancy, leading to a dry and persistent finish, enriched by delicate hints of green tea and lime. The closing is particularly savory and refreshing, leaving a pleasant gustatory imprint.
