Champagne Olivier Horiot
Soléra Magnum
The Champagne Soléra by Olivier Horiot is an original and charismatic cuvée that gathers within the same bottle all seven grape varieties authorised by the Champagne appellation, the three classics Chardonnay, Pinot Noir and Meunier alongside the four Cépages Oubliés Arbane, Petit Meslier, Pinot Blanc and Pinot Gris. It comes from Les Riceys, at the southernmost edge of the Côte des Bar, from a complantée parcel named "Sol est Roi" planted in 2000 to the north-west of the village, where a single terroir of grey marl on hard Kimmeridgian limestone imprints on the wine a marked minerality, enhanced by the simultaneous co-fermentation of the grapes. The cuvée takes its name from the famous Andalusian Xérès method, which is applied here to ensure continuity over time and a complexity in constant evolution.
This edition expresses an equal-parts blend of the seven Champagne varieties, Chardonnay grapes, Pinot Noir grapes, Meunier grapes, Arbane grapes, Petit Meslier grapes, Pinot Blanc grapes and Pinot Gris grapes, all from the same complantée parcel. Vinification and fermentation are carried out in casks for one year, with very few sulphites and without fining or filtration. The wine then follows the perpetual Soléra method in foudres, which blends wines from different harvests to create a style that preserves the balance between continuity and evolving complexity. Without final dosage, in Brut Nature style, the cuvée offers itself in its most transparent form.
On the palate, the wine fascinates with its luminous reflections crossed by a vibrant perlage, leading into an austere and elegant nose that weaves ripe yellow fruit, exotic nuances, herbaceous touches and toasted almond, completed by a vanilla whisper. The entry is deep, fresh and layered, with a texture that harmoniously balances tension and roundness, supported by a lively acidity and a salinity that sculpts every sip. The balance plays on the contrast between evolving character and drive, while the finish closes long, complex and rhythmic, leaving an aftertaste of rare depth. Total production amounts to 2,425 bottles, 200 Magnums and 10 Jéroboams.
