Champagne Drappier
Trop m'en faut!
The Champagne Trop m’en faut! by Drappier takes its name from an old expression drawn from the work of François Rabelais and embodies one of the most fascinating challenges of the Côte des Bar, which is bringing Fromenteau back to life. Fromenteau is the historic Champagne name for Pinot Gris and one of the region’s Cépages Oubliés. Appellation rules do not allow it to be named on the label, which explains the playful and slightly provocative title chosen for this cuvée. Conceived by Hugo Drappier as a rich and sunny expression of the Urville terroir, where the family has tended its vineyards since 1808, it comes from the Les Truchots lieu-dit, a south-facing vineyard at around 280 metres on Kimmeridgian limestone soils.
This edition is made exclusively from Fromenteau grapes picked at full ripeness. Vinification and maturation take place half in once-used barriques and half in older demi-muids crafted from oak grown in the forests of the Côte des Bar. After tirage the wine ages for around 24 months on the lees before dégorgement, and the cuvée is released with no final dosage, in the Brut Nature style, a choice that lets the natural richness of Fromenteau and the mineral purity of Urville’s limestone soils come through with complete transparency.
On tasting, Trop m’en faut! shows a pale gold hue with straw-yellow highlights and an intense nose of ripe mirabelle plum, apricot and exotic fruit. These are joined by acacia honey, dried flowers and a delicate hint of beeswax, while aeration brings out notes of hazelnut and bread crust. On the palate it reveals a dense, enveloping structure with a silky, almost waxy texture, where the richness of the fruit is balanced by vibrant limestone-driven minerality and a light tannic grip. The finish is long and elegant, with savoury persistence and a remarkably pure close.
