Champagne Olivier Horiot
Métisse Magnum
The Champagne Métisse by Olivier Horiot is a cuvée that tells the plural vocation of Les Riceys, a village in the Côte des Bar where biodynamic practice translates into a deeply artisanal idea of Champagne. Born from the dialogue between eight different terroirs of the village, the wine returns an essential and transparent expression in which the vigneron's hand withdraws to let the raw material speak, with oenological intervention reduced to a minimum.
This edition, from the 2020 harvest base, sees a prevalence of 80% Pinot Noir grapes and 20% Pinot Blanc grapes, from old vines distributed across eight different terroirs of Les Riceys. Each variety is vinified separately and the blend is rounded out by around 20% of vin de réserve perpétuelle, kept in stainless steel tanks and refreshed every year. Vinification and fermentation are carried out with very few sulphites and without filtration or fining. After tirage, the wine undergoes maturation on the lees for over 30 months. Without final dosage, in Brut Nature style.
On the palate, the wine displays a golden hue with brilliant reflections crossed by a fine and persistent perlage, leading into a broad and articulate bouquet that weaves white-fleshed fruit, ripe citrus, wild flowers and a brushstroke of dried fruit, completed by an iodised whisper and a spiced nuance. The entry is taut and deep, with a vibrant texture supported by a sharp acidity and a salinity that runs through the entire sip, returning a clarity that fully reflects the vigneron's natural philosophy. The balance plays on the contrast between aromatic freshness and territorial depth, while the finish closes long, precise and rhythmic, leaving an aftertaste of rare essentiality. Total production amounts to 10,028 bottles, 438 Magnums and 30 Jéroboams.
