The Champagne Nox by Manon Boutillez-Guer originates in Villers-Marmery, a Premier Cru village in the Montagne de Reims, an area renowned for its chalky soils and the expressive elegance of its wines. “Nox,” from the Latin for “night,” represents the more intense and profound expression of this young vigneronne’s production, interpreting the terroir with contemporary sensitivity and a commitment to sustainable viticulture. This cuvée shows a more structured and enveloping identity while maintaining the maison’s hallmark precision.

This edition, based on the 2021 vintage, is crafted predominantly from Pinot Noir, a grape that in this parcel achieves a refined and vertical profile thanks to the village’s limestone soils. The blend includes a portion of reserve wines to ensure stylistic continuity and added complexity. Vinification takes place in stainless steel, with possible partial aging in wood to broaden the textural dimension, followed by at least 24 months of lees aging. The low dosage of 2 g/L places it in the Extra Brut category, enhancing its precision and tension.

On the nose, Nox opens with notes of ripe red berries, cherry, and small woodland fruits, complemented by subtle spicy nuances and light toasted hints. On the palate, it reveals greater breadth compared to the cuvée Lux, with a solid structure, well-integrated acidity, and a fine texture supported by a delicate mousse. The progression is harmonious and dynamic, leading to a persistent, slightly saline finish that underscores its balance and overall elegance.

Produced in a limited run of only 2,390 bottles.
