The Côteaux Champenois Blanc “Haut Revers du Chutat” by Jacques Lassaigne is a still white wine that tells with extraordinary precision the essence of the Montgueux terroir, often referred to as the “Montrachet of Champagne” for its chalky structure and favorable exposure. Made from pure Chardonnay, sourced from a single parcel planted in 1968, it is produced only in the warmest vintages, when the musts naturally reach 12.2% alcohol, a level too high for Champagne’s secondary fermentation.

The 2019 harvest was vinified in neutral oak barrels of 550 liters, where the wine aged for 22 months on its lees, without bâtonnage, and without undergoing clarification, filtration, or the addition of sulfites. A craft-driven and respectful approach that preserves the integrity of the fruit and the voice of the soil.

In the glass, it shows a brilliant golden yellow. The nose is broad and radiant, with aromas of citrus, white flowers, and delicate exotic notes. The palate is tense and savory, marked by saline acidity and a structured texture reminiscent of the finest whites from the Côte de Beaune. The balance is impeccable: ripe, exotic fruits blend with an electrifying mineral streak, creating a wine capable of standing alongside prestigious Burgundy labels.
