The Champagne Les Savelons by Domaine Gonet-Médeville is a Blanc de Noirs originating from the Grand Cru of Bouzy, one of the most highly regarded areas of the Montagne de Reims for the expression of Pinot Noir. More precisely, the grapes come from the eponymous lieu-dit Les Savelons, one of the family’s historic parcels, characterized by chalky soils with clay components that promote power, precision, and depth. The Domaine’s philosophy is rooted in a rigorous reading of the terroir, with measured interventions and a constant pursuit of balance between substance and tension.
This Millésime 2019 edition is vinified with the aim of ensuring maximum varietal clarity. After tirage, the wine undergoes a minimum ageing of 48 months on the lees, a choice that helps integrate structure and aromatic complexity without weighing down the profile. The final dosage of 3.5 g/l, in Extra Brut style, accompanies the wine discreetly, preserving its identity and maintaining a dry, precise line.
On tasting, Les Savelons reveals clear aromas of ripe red fruits, citrus, and delicate hints of bread crust and subtle spices. On the palate, it shows a solid structure, supported by well-integrated acidity and a chalky texture that guides the wine’s development. The finish is long and consistent, dry, elegant, and well balanced, confirming the deep, territorial character of Pinot Noir from Bouzy. Produced in a limited run of just 3,500 bottles.
