The Champagne Sermiers by François Secondé takes shape in the eponymous Premier Cru village of the Montagne de Reims, a rarity in an area historically devoted to Pinot Noir, where six small parcels of Chardonnay tell the story of a microterroir of extraordinary singularity. This Blanc de Blancs embodies a philosophy of fidelity to the place and of enhancing the less common expressions of Champagne, returning to the bottle the chalky luminosity and mineral verticality of a seldom-represented cru.
This edition, built on a perpétuelle base that dialogues with multiple harvests, is based entirely on Chardonnay grapes gathered from six parcels in the village of Sermiers, with vinification and malolactic fermentation in stainless steel and a brief passage in wood to enrich the aromatic texture. After tirage follows an ageing of at least 18 months on the lees with manual remuage, and the final dosage of 5 g/l, in Brut style, enhances its sharpness and expressive integrity.
On tasting, Sermiers reveals a very fine and creamy bubble accompanying a slender and taut structure, where nervy acidity traces a vertical profile of great drive and definition. On the palate a chalky minerality emerges, wrapped in a silky weave, while the finish prolongs a saline and floral trail of rare elegance, sustained by a measured persistence that amplifies the sensation of depth and aromatic composure.
