The Champagne Psyché by Émeline De Sloovere takes its name from the mythological figure of Psyche, symbol of the soul and spirit, and translates this idea into a wine of great expressive purity, rooted in the vineyards of the Coteaux Sud d’Épernay. The grapes come from the villages of Monthelon and Mancy, where clay-limestone soils host old vines with an average age of 65 years, propagated through massal selection and farmed with deep respect for the life of the soil. The result is a sincere portrait of a still little-known territory, interpreted with artisanal sensitivity and a vision attentive to the balance between people and nature.

This cuvée, an assemblage of Chardonnay and Meunier grapes in equal parts, undergoes vinification and fermentation in stainless steel tanks, with no filtration or fining and a deliberately low addition of sulphites. After tirage, the wine ages on the lees for at least 36 months, which gives depth and definition to the whole, while the final dosage of 2 g/l, in Extra Brut style, precisely preserves the tension and transparency of its terroir of origin.

On tasting, Psyché shows a fine perlage and a bright aromatic profile, built on notes of fresh white-fleshed fruit and citrus, accompanied by light hints of bread crust and a subtle mineral thread recalling the limestone soils. On the palate it reveals a harmonious balance between the taut freshness of Chardonnay and the fruity roundness of Meunier, with a slender yet well-articulated structure, supported by a creamy mousse and vibrant acidity. The finish is long and saline, with a clear persistence that brings back citrus and minerality.
