Champagne Clandestin
Austral Magnum
The Champagne Austral by Clandestin is a Blanc de Noirs from Pinot Noir grapes only, the result of the collaboration between Benoît Doussot and Vouette & Sorbée. The grapes come from organically farmed vineyards in the Côte des Bar, all south-facing on Kimmeridgian soils of calcareous-clay matrix, the reflection of an intact and identity-driven terroir.
This edition, from the 2022 harvest, is vinified in used barriques with indigenous yeasts only, without any oenological correction. After tirage, the wine ages for a minimum of 36 months on its own lees, before dégorgement without final dosage (Brut Nature, 0 g/l), enhancing an artisanal and pure vision of Champagne.
On tasting, Austral reveals a layered and vibrant nose, with wild red fruits and flint opening the aromatic scene, followed by notes of pear, ripe citrus, bread dough and light honey, in an evolution that combines freshness and maturity. The long stay on the lees, also in the bottle, contributes to defining the complexity and olfactory precision of this cuvée. On the palate it is direct, taut and saline, supported by incisive acidity and an enveloping, almost tactile consistency. The finish, clear and persistent, coherently reflects the nature of the terroir and the winemaking philosophy of the vigneron, a structured, mineral and architectural Champagne, designed for those seeking an authentic sensory experience, free from superfluous concessions.
