The Champagne Lutétien by Legrand-Latour tells the story of a long-vanished tropical sea, the one that around 45 million years ago, in the Lutetian age, stretched as far as Champagne, leaving behind the limestone sands of Vandières, rich in fossil shells. From this unique mineral matrix comes a wine that combines geological depth with contemporary precision, a new chapter in a project that reads Champagne through its geological layers.

This edition, 2021 harvest, shows a slight prevalence of Chardonnay grapes at 55%, alongside Pinot Noir at 45%, vinified and matured for 12 months in fût de chêne following an artisanal, non-interventionist approach, with no added sulphites. After tirage, carried out with grape must, comes at least 42 months of ageing on the lees, while dégorgement takes place with no final dosage, in a Brut Nature style, to deliver an authentic expression of place and harvest.

On tasting, Lutétien shows a bright yellow colour with a very fine perlage, with chalky notes, taut citrus, crisp apple and white flowers joined by briny, iodine nuances that recall the fossil origin of the soil. On the palate it is taut, dry and incisive, with a vibrant texture combining energy, salinity and aromatic precision, leading to a long, mineral and persistent finish of great balance and clarity. Total production is 3,212 bottles.
