Champagne William Saintot
Millésime 2018
The Champagne Millésime by William Saintot comes from the Grande Vallée de la Marne, where the clay-limestone subsoils of the Premier Cru terroirs lend the wines structure, freshness and a marked depth. Born from the choice of an exceptional vintage, this cuvée gathers the soul of historic vines grown by selection massale, with the Chardonnay of Bisseuil planted in 1963 and the Pinot Noir of Avenay Val d'Or dating back to 1970, in an expression faithful to the authentic character of the place it comes from.
This edition, Vintage 2018, features a blend with a prevalence of Pinot Noir grapes, joined by 20% Chardonnay, using exclusively the tête de cuvée to ensure the utmost finesse. Vinification and fermentation take place 72% in fût de chêne and 28% in stainless steel tanks, without malolactic fermentation, cold stabilisation or filtration. After tirage comes an ageing in the cellar of at least 48 months, while the final dosage of 0.65 g/l, in an Extra Brut style, enhances its purity, letting the mineral matrix of this terroir emerge with clarity.
On tasting, the Millésime 2018 stands out for an intense and expressive profile, where freshness guides the development with a clean cadence supported by a broad, well-defined structure. On the palate the texture reveals generous nuances of dried fruit at mid-palate, accompanied by a fine perlage and a long, elegant persistence, in a chiselled and deep finish that seals its elegance and character.
