Champagne William Saintot
La Côte de Chignon 2015
The Champagne La Côte de Chignon by William Saintot is a single-parcel cuvée from the Premier Cru village of Avenay-Val-d'Or, in the Grande Vallée de la Marne, a purest expression of Pinot Noir. The fruit of a single lieu-dit with a hilly terroir and a marked personality, it gathers the soul of a parcel that is part of the Saintot family history, where a cherry tree planted in 1934 by Clément Saintot still crowns its highest point, in a reading faithful to the authentic character of the place it comes from.
This edition, Vintage 2015, is made exclusively from Pinot Noir grapes, using only the tête de cuvée to ensure the utmost finesse. Vinification and fermentation take place entirely in fût de chêne, without malolactic fermentation, cold stabilisation or filtration, in a process that preserves its integrity. After tirage comes an ageing on the lees of at least 72 months that sculpts its structure, while the final dosage of 0.65 g/l, in an Extra Brut style, enhances its purity, letting the expressiveness of the terroir emerge.
On tasting, La Côte de Chignon 2015 stands out for an elegant and vibrant profile, where the richness of the vintage and the depth of Pinot Noir are expressed with great character. On the palate the texture reveals itself as broad and enveloping, surprising for its richness and roundness yet always supported by a sharp freshness, with a fine perlage and a long, deep persistence, in a taut and chiselled finish that seals its balance and personality. Production in a limited run of only 509 bottles.
