Champagne Voirin-Jumel
Cuvée 555
The Champagne Cuvée 555 by Voirin-Jumel takes its name from the historic address of the house, located at 555 rue de la Libération in the Grand Cru village of Cramant, at the heart of the Côte des Blancs. The philosophy is that of a gastronomic Blanc de Blancs, born from the most inspiring parcels of the chalky terroir, where Chardonnay expresses a unique mineral verticality and lends itself to a slow and meditated vinification, capable of translating the voice of the terroir with absolute precision.
This edition, from the 2018 harvest, comes exclusively from Grand Cru Chardonnay grapes and undergoes vinification and fermentation in fût de chêne with low-tannin barrels restored by a Burgundian master cooper. After tirage follows a long ageing on the lees of about five years, before dégorgement reveals its full maturity. The final dosage of 4 g/l, in Brut style, enhances the depth and saline freshness of the vintage.
On tasting, the Cuvée 555 reveals a luminous golden hue and a very fine perlage, with a silky and dense texture that envelops the palate without weighing it down. On the palate emerges a broad and chiselled structure, supported by a sharp acidity that dialogues with the toasted notes of the wood, while the chalky minerality of Cramant runs through the sip with great clarity. The finish is very long, vibrant and persistent, with a savoury return of fine pastry and a saline trail of rare class.
