Domaine Bolieu, led since 1988 by Laurence and Charles Baffard, is located in Bassuet, where the terroir is unique and exclusive and it produces a great structure Chardonnay, with citrus and exotic notes. The terroir is that of the Côteaux Vitryats, which with their 480 hectares represent the smallest production area in Champagne. Bassuet, Côteaux Vitryats, Vitry-le-François are located between Reims and Troyes, an area where all the vineyards are placed on the hills and exposed to the South-East.

Domaine Bolieu has 6.5 hectares of its own vineyards, with 50 years old vines, on turonian matrices (geological era 93-86 B.C.) of chalk mixed with limestone marl together with clay, which give to the wines acidity, flavour and longevity, together with softness and fruity notes. Chardonnay dominates the area and Bolieu is no exception, leaving to Meunier a small production of 5%. The production is around 26,000 bts and its Champagnes are distinguished by their elegance and finesse. The property is certified HVE - Haute Valeur Environnementale, attesting that the vines are cultivated using a "sustainable" method of viticulture.
