Champagne Secondé-Simon
Rosé Variation
The Champagne Rosé Variation by Secondé-Simon is an elegant and structured blend, composed of 60% Pinot Noirand 40% Chardonnay, entirely sourced from the prestigious Grand Cru village of Ambonnay, in the Montagne de Reims. The cuvée is crafted with the addition of 8% Pinot Noir vinified as red wine, which gives the Champagne its delicate hue and enhances its aromatic intensity. Vinified in stainless steel and oak barrels, and aged on the lees for a minimum of 36 months, this Rosé Champagne reveals a perfect balance between fruit, freshness, and structure.
On the palate, Rosé Variation unveils a chiselled and harmonious flavour profile, marked by red fruit notes interwoven with a fine texture and generous persistence. The finish unfolds with elegance, offering length and a subtle chalky minerality, while the predominance of organic components enhances its depth and sensuality. The attack is fresh and sparkling, before the cuvée quickly evolves into a rounded, enveloping softness. The well-calibrated acidity and fine effervescence contribute to shaping an elegant, smooth, and caressing structure, reminiscent of cashmere. The dosage, carefully balanced, acts as a unifying element, generating a refined sense of gourmandise and perfect harmony.
