Champagne Secondé-Simon
Imagine
The Champagne Imagine by Secondé-Simon is an intense expression of the Grand Cru of Ambonnay in the Montagne de Reims. Obtained from a blend of 70% Pinot Noir and 30% Chardonnay grapes, the comes from the 2015 harvest base and follows a process of vinification and fermentation in fût de chêne, before ageing for 4 years on its lees. The choice of not adding final dosage - making it a Brut Nature - enhances the wine's purity and structure, highlighting its authentic and powerful character.
The Champagne Imagine has a light and brilliant blonde colour, with a perfect ‘champenoise’ expression. The effervescence is lively and extremely fine, forming a delicate collier of pearls on the surface, lending freshness and dynamism to the glass. On the nose, the first impact suggests an autumnal atmosphere: ripe pears, dried fruit and woody notes blend harmoniously against a citrus background. With time, the aromatic profile intensifies, revealing nuances of aquavit and nuts, with a progressive evolution towards a more pronounced woody accent. On the palate, the attack is lively, with a subtle tannic sensation that structures the sip. The combination of freshness and tannicity creates a tight and precise texture reminiscent of raw linen. The absence of dosage brings out this textural complexity and enhances the wine's strong personality, defined above all by the finesse of the acidity. The final persistence is long and layered, with a finish combining lime and tannic astringency, accompanied by a delicate dusty bitterness, a true signature of the terroir.
