Champagne Pinot-Chevauchet
Millésime 2008
The Champagne Millésime 2008 by Pinot-Chevauchet is a Blanc de Blancs of rare elegance, the expression of an exceptional vintage, composed exclusively of Chardonnay, harvested from Premier Cru plots located between Moussy and Pierry, in the heart of the Vallée de la Marne. The first fermentation takes place in fût de chêne, with natural yeasts supporting both alcoholic and malolactic fermentation, the latter completed in spring. This is followed by the prise de mousse in bottle, with an ageing period of at least 14 years on the lees, and a final Brut dosage of 3.5 g/l, which enhances the purity of the terroir and the refinement of the vintage.
On tasting, Millésime 2008 appears in the glass with a pale golden yellow hue, animated by a fine and persistent perlage. The aromatic profile is fresh and seductive, featuring notes of white fruit, dried fruit, and delicate mineral nuances. On the palate, it shows balance, between vibrancy and softness, with flavours of fruit and white flowers, and a finish that is elegant, mineral, and subtly saline.
This Blanc de Blancs Champagne embodies the spirit of the Pinot-Chevauchet family, long devoted to excellence and environmental respect. For over twenty years, the family has practiced sustainable and reasoned viticulture, avoiding the use of herbicides and chemical products, favouring organic nutrition and natural pest control in the vineyard.
